My first experiment was a play on Prosciutto Egg Cups. I normally have 3 eggs for breakfast and instead of using a ton of expensive Prosciutto to make 3 different cups, I made a Prosciutto boat. LOL!
Lay the Prosciutto in one of those ceramic baking dishes so that it covers the bottom and the sides.
Add 3 eggs, then salt and pepper to taste. Easy peasy and that is why I love it!
And voila its done about 30-40 minutes later at 400° in the oven. Okay it took forever to freaking cook and I was beyond anxious waiting for it to be done but it was soooo good! I wish the yolks would have been a little more runny but I am absolutely clueless on how to get the whites to cook all the way through yet have the yolks runny. Not sure if it is even possible but I will try and do a few more experiments to see if I can do it.
The other thing I tried to make was Vanilla Coconut Milk Ice Cream! I know Truvia isn't the greatest thing on the earth but I was really craving something sweet and this was my answer. Most recipes don't have the Truvia in it but when I tasted the custard it wasn't that sweet and in the end I screwed up and added too much Truvia. It was good enough to eat but the next batch I make will not have any in it. I topped it off with some blueberries and it made for a delicious dessert!
And damn you Costco produce department for being next to the bakery! I swear my sweet tooth lately has almost been unbearable but I thought a nice fruit salad would do the trick. Well of course you can only buy 80 pounds of fruit at Costco and this was the end result (minus the nectarines I added after the picture was taken). I am not supposed to have that much fruit but again it is better than eating sugar free chocolate and it tastes soooo good! I have watermelon, blueberries, grapes, raspberries, black berries, strawberries, pineapple, and nectarines in these giant bowls of goodness. Since I made fruit salad for what seems like 100 people, I am going to send some of it with my husband when he goes to work Monday night.
All in all it has been pretty fun making new things as it gives me something to look forward to throughout the day. If I could only get my husband on the same schedule and diet as me then I would be in heaven. He is the cook in the house and I could just sit back and enjoy the goodness but until then it is up to me.
